Inspiration for this weekend 🌟
🗺️ Explore
Vejle. If you only have one day to explore the charming town of Vejle, here's how to make the most of it!
☕ Morning Treats: Start your day with a cozy coffee and some delicious buns at Folmers Microbageri. It's the perfect way to fuel up for the day ahead.
🎒 Family Fun: If you're traveling with kids, head to Økolariet, a fantastic Science and Education center that's free of charge. The little ones will love exploring all the interactive and educational activities!
🍽️ Lunchtime: For lunch, don't miss the ribbensandwich from Køkkens Pølsevogn—probably it's the best in Denmark!
🌲 Nature: Don’t miss a visit to Dyrehaven (The Deer Park), where you can get up close to various deer species, enjoy a peaceful walk, and take in the stunning natural surroundings.
🏛️ Culture: Be sure to visit the iconic Fjordenhus and The Wave. Both are architectural masterpieces. Afterward, you can grab dinner at a restaurant nearby.
🌅 Sunset Views: To finish the day, take a quick trip to Zleep Hotel Vejle. Ride the elevator to the 11th floor and follow the "Roof Terrace" signs. Just a few steps up, you'll be rewarded with breathtaking views of Vejle fjord, the harbor, and the town. Grab a drink at the restaurant and enjoy a peaceful sunset on the roof terrace—the perfect way to end your day in Vejle.

🍽️ Savor
I was honestly surprised when I read that only 55% of Danes eat vegetables daily. How can that be? With endless recipe ideas, easy access to fresh produce, and quick cooking methods, veggies should be a daily thing!
That's why this week, I’m sharing a mouthwatering, finger-licking mushroom dish that you’re going to love. I won’t tell you it tastes like chicken—because that’s not the point. The goal here is to fill our tummies with delicious vegetable goodness, and these Fried Oyster Mushrooms do just that. 😋
🌿 Unwind
Reading is a perfect way to unwind. It reduces stress, promotes calm, and sparks creativity, making it an ideal relaxation activity.
After having a child, reading became a forgotten pleasure for me. But this year, I set myself a challenge: to read at least 4 books in 4 different languages. I started with Raising Cain (in Lithuanian), followed by Pause (in Danish). Then, Essentialism caught my attention, so I read that too. This led to reading 4 more books in English by the end of summer. Next up is a children's book in Spanish—I'm counting on my Duolingo skills to make it happen! 🎯
Happy Weekend!
